Rui's Role

Rui will lead the specialist development of Shizuku's tea programme — connecting its creative vision with the tea knowledge, relationships and judgement needed to realise it with depth and integrity.

Tea considered as a whole
Tea will be considered as a whole: from growing environment, tea material and craftsmanship to sensory quality, brewing, cultural context and the final experience of the guest. This includes considering how tea can live beyond the immediate service experience — through retail, at-home drinking, and other future expressions of the Shizuku brand — so decisions made for opening can also support its longer-term commercial and brand potential. This keeps decisions across the programme connected, rather than treating sourcing, service, storytelling, and future opportunities as separate concerns.
Access & Connection
A living network of producers and makers
Rui brings Shizuku into a wider living network of producers, makers, specialists and tea knowledge. The value is not simply access to harder-to-find teas, but greater proximity to what is happening within tea itself: understanding origins and harvests, recognising exceptional work, knowing when and where to look, and developing meaningful relationships with the people behind the tea. The longer-term aim is for Shizuku to become increasingly connected to this world itself, rather than remaining dependent on a static catalogue or conventional supply chain.
Discernment
Judgement, translated into Shizuku's language
Access to exceptional tea is only valuable when paired with the judgement to know what is right for Shizuku and the niche it seeks to serve. Rui will assess quality, provenance, craft, sensory character, cultural context and practical suitability together, translating that judgement through Shizuku's own elemental and creative language to shape a tea programme that is both credible and distinctly its own.

The vision is for Shizuku to address a gap that remains in London: a place where exceptional tea, cultural depth and contemporary experience are not simply present, but thoughtfully integrated and held to the same standard. Achieving this without compromising one for another is rare — and gives Shizuku the opportunity to set a new reference point for tea in London. Tea can be exceptional in quality and clearly connected to its origin, makers and cultural context, without feeling inaccessible; technically excellent without becoming intimidating — all within a space where people can simply meet, listen, drink and be themselves. This programme will build the tea foundations to make that possible: connecting producer to cup, specialist knowledge to guest experience, and the depth of tea with Shizuku's own contemporary expression.
